“Patience” from the AOP Picpoul de Pinet promises delightful dining
The AOP Picpoul de Pinet is located deep within the triangle formed by Agde, Pézenas and Sète. Its vineyard encircles the Thau lagoon and encompasses six towns: Castelnau-de-Guers, Florensac, Mèze, Montagnac, Pinet and Pomérols. The AOP only produces white wines from a single grape variety: Picpoul Blanc, of great renown, ideal to accompany shellfish and crustaceans. oes by the pretty name of “Patience” has joined the collective. Introduced by the Syndicate of the AOP Picpoul de Pinet, inaugurating a new gastronomic range to position the wines of the appellation with real potential for ageing amongst the great white wines of Languedoc. The objective is to reveal white wines with greater complexity and balance. And while the approach remains a group effort, the individual development of these vintages remains open to all of the winegrowers involved. Four cooperative cellars and five private cellars currently are engaged in this great adventure. Stepping outside the region, “Le Folia”, the Château Flaugergues’ restaurant in Montpellier was entrusted by the appellation to serve bottles with its wonderful dishes. As a further guarantee of “Patience’s” high quality and great potential, Gaby Benicio, sommelier of the Michelin-starred “Aponem” restaurant in Vailhan, has become its first “Ambassador” suggesting judicious food/wine pairings for the occasion. The “Patience” wines are now being served from the wine list with enthusiasm !
