Four-handed cuisine at the Michelin-starred La Table de Castigno* in Assignan

Inspired by nature’s bounty at the edge of the Haut Languedoc Regional Natural Park on the Saint-Chinian AOC terroir, Justine Viano and Stéphan Paroche, united in the kitchen as in life, have succeeded in only a few months in keeping the Michelin star at La Table de Castigno.

Arriving in Assignan in the summer of 2020, after already having "starred" at the Hameau des Baux in Provence in 2019, the couple started a new challenge. Their recent travels to Vietnam inspired the two chefs to find ways to integrate Asian cuisine with Provencal DNA, serving up a culinary experience that opens up new horizons.

On this extraordinary terroir where grapevines and scrublands peacefully coexist, Justine and Stéphan have refined their signature modern cuisine using local products and respecting the seasons. Most of the vegetables are grown in the château's own vegetable garden, just like the eggs that come from its henhouse! The lands in Occitania all have a strong character: Aubrac, the Cévennes, Thau lagoon, the Camargue, the Mediterranean coast... all are so close that chefs can readily select the best and forge their creativity. During the summer months, eating one of their meals on the terrace facing the glorious garden is a delight. In the fall, the tastefully decorated rustic barn provides a warm stone-walled shelter as this delicious story unfolds before your eyes and on your plate.
